Myoglobin is a fluid present in muscle tissue, (as well as other places.) It’s what makes the juices in a steak look red.
Rare steak enjoyers know this, because when someone calls their steak “raw” or “bloody” they can pull out the myoglobin factoid.
They are “technically correct,” or, as I like to call it, “correct.”
